"U Polp": Olearia Clemente

A blend with prevalence of Ogliarola olive variety produced through cold extraction (27 °) to avoid as much as possible the loss of polyphenols and the alteration of the oil’s aroma and flavour. The result is an olive oil characterised by notes of fruits, herbs scents and a final almond taste.

Premium Quality "1895": Olearia Clemente

Obtained through cold extraction from a variety of selected olive from Gargano, the Premium Quality “1895” from Clemente perfectly resonates with our land and with the organoleptic characteristics that it gives to the food.
With its herbs scents that bring up the podolian pasture of the Parco del Gargano and its notes of rosemary and orange flowers that inhabit this land, this olive oil can be paired with foods such as legumes and roasted meat. A product of high quality and versatility.

BioOrto

A tris of EVO that allows to try the three main varieties of olive from Gargano and alternate them in your diet according to their characteristics.
On the left side in the red bottle, there is the monovarietal of Coratina well-known for its bitter and spicy notes which make it perfect to pair with raw fish, soups of legumes and bruschetta.
In the middle, the monovarietal of Peranzana. A perfect balance between acidity and bitterness that make this olive oil one of the most appreciated in the region. Its scents of tomatoes and aromatic herbs perfectly accompany molluscs and tartar, but also salads and marinated vegetables.
On the right, the monovarietal of Ogliarola, loved by many thanks to its delicacy and neutrality which are particularly enhanced when it is accompanied with boiled vegetables and soups with low spiciness.

Chianchette al Finocchietto

A historical snack which, due to their flat shape, takes its name from the word “chianca”, a term that dates its origin back to the Middle Age which means flat plate and refer to the calcareous rock shaped and adopted to build pavements and dry-stone wall.

Ingredients: semolina flour, extra virgin olive oil, white wine, salt and fennel seeds.

Tarallini

Il Tarallo. Un tipico prodotto d’origine pugliese nato come “pane essiccato” fatto dagli scarti della massa del pane che ha fatto il giro del mondo. Una semplice prelibatezza da consumare in qualsiasi momento magari con un bel bicchiere di vino rosso.

Ingredients: semolina, olio extravergine d’oliva, vino bianco e sale.

Le cartellate pugliesi. Una ricetta millenaria per alcuni risalente al VI a.C., quando gli antichi greci preparavano questi dolci come offerte votive da donare agli Dei.
Oggi queste delizie sono diventati uno dei simboli più identificativi del Natale in tutta la regione ed anche in altri paesi italiani in cui la tradizione pugliese è stata diffusa nel corso dei secoli.

Nato a Monte Sant Angelo da un goloso incidente in cucina durante la preparazione dell’impasto per le ostie, oggi questo dolce è diventato un emblema della tradizione culinaria garganica.

Chili Compose

Le origini di questo prodotto ci riporta nelle terre di Calabria e del sud Puglia dove, in seguito all’introduzione del peperoncino dal Sud America da parte dei coloni spagnoli, veniva utilizzato per la conservazione di cibi o per insaporire pietanze varie. Noi vi proponiamo la composta di peperoncino di Essentiae del Salento che ormai da anni si prefigge di promuovere elisir salentini mantenendo le ricette tradizionali e senza fare affidamento a conservanti ed alcun tipo di aditivo chimico.

Ingredients: peperoncino, cipolla, pmodori secchi, mele e vino negroamaro negroamaro.
